Ripasso Valpolicella Classico, Montigoli, Veneto, is produced by Cantina Valpolicella Negrar, a co-operative located just a few kilometres from Verona, in the heart of Valpolicella Classico district , a landscape historically devoted to viticulture and wine making. The company farms 600 hectares of vineyards spread across the diverse zones of Valpolicella- above all on hillsides- cultivated by our 220 members, and monitored daily by the winery's own professional team. For this wine, harvest is by hand, from the end of September into early October. A further selection of healthy whole bunches are laid out in crates or on straw mats to dry for 120 days. This appassimento process shrivels the grapes and concentrates sugars, colour and flavour. Maturation in 50hl Slavonian oak casks for 18 months. A further 6 months ageing in bottle before release.
