A regional speciality in Cognac, where brandy, matured for a year, is added to grape musts and the unfermented grape juice is allowed to mix with the spirit. A further maturation in oak until the next harvest gives the spirit time to marry the cognac flavours with the fruity sweetness to produce Pineau des Cherentes.
