Intense dark garnet in the glass. A shy nose at first showing dark fruit with a hint of currant and violet. Gravelly notes follow with time. Full-bodied with an echo of dark fruit, finishing on savoury flavours and pronounced spice. The texture is refined and the wine will mature well in the bottle.
The fruit for Cyril Back 2007 was sourced from a dry-farmed vineyard in Agter-Paarl, planted on deep Glenrosa soils and is on a north-westerly facing rocky outcrop. This is the same vineyard from which Fairview sources the fruit for The Beacon Shiraz. This bushvine vineyard was planted in 1995 and the wine is named after Cyril, the father of current owner, Charles Back.
