Ruby Red colour with medium intensity. This wine has very ripe fruits of sultanas and compote on the nose, accompanied by cinnamon, vanilla and toast. A sweet attack on the pallet of ripe fruit and liquorice with a long, luscious finish.
The different varieties which have originated from various estates are fermented separately in stainless steel tanks where strict temperature control is administered. Fermentation is carried out at 28-29°C for approximately ten days. Maceration is subsequently carried out for a further 22-23 days at 17°C after which the wine is devatted and placed in separate tanks to allow for malolactic fermentation. The wines are then aged for 29 months in American Oak casks during which time they are racked three times a year. A further 36 months ageing in bottles.
