Primary fruit aromas of plum, dark berries, nutmeg and mocha are complemented by vanillan oak characters. A full, rich palate with vibrant dark berry characters and overtones of mocha and spice. A well-balanced wine with great depth, length and persistence of flavour. The subtle oak characters add further complexity while the palate finishes with soft, lingering tannins.

Grapes are picked on both colour and flavour development, then crushed and fermented for 7-10 days at around 20 degrees. Small open top fermenters are used with hand pumping over and rack and returns to ensure optimum extraction of tannins and colour. The ferment is then softly pressed using an airbag press, so we do not extract the bitter tannin, producing a fruit driven style of wine.

Once pressed the wine is transferred into a combination of French and American oak where it undergoes natural malolactic fermentation. Following maturation the wine is blended and prepared for bottling.

Each parcel of fruit for Jester is fermented on skins for 5 to 6 days at a cool temperature to enhance the pure berry fruit. The wine is then pressed and undergoes partial barrel fermentation. A natural malolactic fermentation is completed before the wine is racked.

Aged in 2-4 year old French oak for 9 months

Tasting Notes Deep cherry jube in colour, Jester Shiraz continues to show bright, vibrant, rich fruit. A revelation of blue and black berries, there is mocha and a hint of spice on the nose. The palate exhibits focused, genuine fruit and subtle, yet structured, tannins support a velvety elongated finish.

Cellaring:
Will cellar well for 6 to 8 years.

Another stand-out from South Australia's sea-breeze caressed McLaren Vale, where ex-Hardy's man Rob Dundon founded his impressive winery in grand old bluestone cellars.
Following fermentation the wine is softly pressed into new and used French oak hogshead where it undergoes natural malolactic fermentation. Matured for 18 months the wine is then blended and bottled with minimal filtration.

This wine will continue to improve over the next 5-8 years.
